Easy DIY Outdoor kitchen
Simple and quick to install the Napoleon Oasis Modular Outdoor Kitchens are pre made 61 x 61 cabinets which bolt together with leveling feet to create your desired layout. The cabinets have stainless steel doors and drawer with a anthracite cabinet. The Napoleon Oasis Modular outdoor BBQ kitchens can have many different layouts so should you wish to change the layout.
The Napoleon Oasis Cabinets are available for the Napoleon Built in grill head range and you select the grill cabinet for your Napoleon Grill head. Fancy adding a sink or drop in side burner you would need to have the two drawer oasis unit as this has a false top drawer.

The cast iron absorbs the heat and transfers heat evenly over the cooking area. This means any slight variation in gas pressure does not affect the cooking temperature.
Perfect combination when you want a fairly low cooking temperature for fish & pasta.
This dish is so easy to prepare. It has 4 roasted peppers, one finely chopped onion & 2 cloves of garlic. These were put through the blender with a little olive oil.
This mixture was then reduced in the EMBA skillet & chunks of cod, muscles, prawns & squid rings were added. After 5 minutes we added part boiled pasta & left to simmer for a further 10 minutes with foil over to retain the residual moisture.
Finally we added a pinch of salt & pepper to taste. Served with Crusty bread. It was lovely.

It is now Autumn and we thought it a good idea to advise you of the trends we have identified in 2022
1, The exceptional growth in sale of Gozney pizza ovens
The Gozney Roccbox table top pizza oven has been a brilliant product. We have sold numerous units to existing customers who want to add a pizza oven to sit on the worktop of their Outdoor Kitchens
The Gozney Dome is much more than just a Pizza Oven - Both Wood or Gas powered, so you can add smoke flavour or cook as a conventional oven; Bake your own bread; Cook a wood smoked beef joint; Bake a cake. No wonder these have been good sellers
2, The increase sales of Outdoor Kitchens, where customers are redesigning their whole outdoor entertainment areas.
Outdoor Kitchens can be linear or corner shape to suit your outdoor space. They can incorporate outdoor fridges for general entertaining. They can incorporate a gas grill with a ceramic oven or tabletop pellet grill - All sizes, full range of components.
3, Sustained growth of Wood Pellet Grills.
These were introduced into the UK a few years ago and have made very good sustained growth over that period.
The basis of the Traeger Wood Pellet grill is, as the name suggests, uses wood pellets as fuel. There are a wide range of wood species, each with their own distinct flavour.
Cook at low temperatures and you get a smokier flavour than cooking at hotter temperatures.
Whatever temperature you want to cook at, just set it into the control panel and the Traeger Grill will maintain that temperature - even if you are cooking at just 100 degC for 8-12 hours - try that on your gas or ceramic grill !
The choice of product goes from the portable / tabletop Ranger to the Timberline 1300 standalone grill.
Heat probe is available for all products. Some products even have WiFi control from your mobile phone.
4, Rubs & Sauces. It may be because of the instore range we held, tied to the popularity of our BBQ Demo days - but rubs & sauces have certainly experienced a massive hike in popularity in 2022

We have noticed a marked increase in the number of customers planning their own layouts.
There are a number of standard Outdoor Kitchens, which include base units, BBQ & various other components.
But today we want to highlight the components you can incorporate into your bespoke Outdoor Kitchen layout.
Whilst the BBQ Grill options can be finished in black powder coated steel, the majority of cupboard doors, drawers and side burners are stainless steel - so for a balanced finish, lets look at just the stainless steel products.
First thing to remember is that stainless steel comes in various grades, with 304 grade being less likely to show surface rusting. Bull Grills, Napoleon & Whistler Burford all use 304 grade, so they are good brands to start with.
Chances are you will be looking for some kind of cupboard door front. These are available in either single or double door options - these usually allow you to store tools, wood pellets etc in the void under the Outdoor Kitchen base.
You can select to have combination door front and drawer units.
Bull have a vented Stainless Steel door front to allow the gas bottle to be stored in the void under the Outdoor kitchen.
Whistler Grills have a waste bin cupboard that has slider rails for easy access to the waste bins.
Bull have a warming drawer that fits onto the face of the Outdoor Kitchen base - This is electrically operated and can be set at various temperatures. This is ideal for resting cooked food prior to serving.
Two other options -
Really popular - Outdoor fridge that slots under your worktops Bull have a single door option, Beefeater a double door option.
There are very few Outdoor Sinks by the main BBQ suppliers however Bull have these available with Hot and Cold taps ready for plumbing straight in to your drop in hole in the work top. Available in three sizes - Small, Medium and Large.

]]>Since then we have used it numerous times and it has remained in perfect condition. Previous cast iron products just developed a layer of surface rust whilst on the draining board waiting to be dried
- but not the Emberware. This has remained rust free.
It is always washed in the sin with hot soapy water, dried & then a little bit of olive oil rubbed ober the surface with kitchen roll. We then put it back in the cardboard box it arrived in and is placed outdoors in the BBQ area.
The latest dish cooked on the Emba was Mexican chicken with rice. The deep sided pan being perfect for this dish.
Mexican Chicken is very simple to cook.
Just drizzle some olive oil in the skillet, add diced onions & peppers and cook slowly until the onions become translucent. Tip these onto a plate & place the chicken breast chunks in the skillet. There will be sufficient residual oil to start & colour the chicken. Now add the Angus & Oink Mexican seasoning & 3 crushed garlic cloves & stir round the pan. No need to cook the chicken right through, as we then add the rice, some chopped coriander and 750ml of water.
Place a lid over the pan and let it all simmer for 15 minutes.
That is it, lovely flavoursome chicken with a bit of a kick

Well we tried something on the small side - Tandoori Chicken skewers.
We set the Traeger Ranger to a gentle 130 egC & filled up with Traeger Pecan wood pellets.
The chicken have been left to marinate for 24 hours in yogurt & Lumberjaxe Tandoori Masala dry rub.
The skewers were loaded with the prepared chicken, red pepper, red onion & courgette. For good measure we then added a light sprinkling of Angus & Oink Tandoori Tikka rub over the surface of the skewers
Well they were delicious - very simple and easy to cook

]]>What is an outdoor kitchen - as opposed to just a large BBQ.
Large outdoor BBQ's, like this Napoleon BBQ can have large charcoal or gas grill head, with side burner and range of base cupboards - all inline.
Outdoor kitchens can also incorporate large BBQ grills & side burners. But they usually incorporate an external fridge, can include a Ceramic grill and / or Wood Pellet grill along with a pizza oven or plancha.

In pre-formed layouts, Outdoor kitchens can be either inline, or corner units.
Alternatively, you can have a modular Outdoor kitchen, where you purchase individual base units to suit the configuration you are after. This being an example of a Napoleon setup
Finally you can have a bespoke base formed to fit your specific garden space and incorporate all the appliances you require and door / drawer units to suit.

So a couple of days ago I received the 10" EMBA Cast Iron Skillet from BBQStoreUK. So when you get a new toy and you have to use it.
I decided to try Chicken with a Tandoori sauce.
Cast Iron grill - perfect to use on my old Cadac BraaiMaxx - as you can see, the wok support is perfect for the 10" EMBA Skillet.
First I heated some fennel, cherry tomatoes, spring onions, coriander & bok choy in a chilli flavoured olive oil. just a few minutes and still crisp.
Followed this by cooking the chicken & mushrooms in a tandoori sauce my wife had in the freezer & added 2 tbls of A&O Tandoori Tikka Gold dried herbs. Added 100mm (Approx) of chicken stock & stirred well.
Served in bowls with homemade coleslaw, a spinkling of chopped nuts & a little bit of coriander sauce I had made previously. It was delicious.
The EMBA Skillet was easily cleaned - and I did remember to add a thin layer of vegetable oil to the surface of the skillet to avoid any rusting.
This weekend we are having a BBQ for a few friends. This time, when the chicken is cooked through, I will add the Bok Choy etc to the Skillet and place on the table so everyone can help themselves - this is where the heat retention of the Cast Iron Skillet will come in really useful.

Our old Skillet is mainly used for Crepes, as it is an ideal size. Despite being stored in the house in a dry cupboard, it still attracts a layer of surface rust, as you can see below. Not very good when you are cooking for friends and family and they see a rusty pan.
So now we are trying the EMBA Cast Iron Skillet. Manufactured in the West Midlands, EMBA Cookware recycles old iron, mainly from the automotive industry, so quite a sustainable product.
Only just opened up the package, and the first thing you notice is the weight and finish of the product, no rough edges and a pre-seasoned surface to start cooking on.

Bit of a cheat really, as the Smoked Haddock was from Morrisons - but we thought we would place it in the Traeger Ranger at 75deg C for 2 hours over a container with water.
The low temperature produced quite a bit of smoke from the Traeger Apple wood pellets.
When the water had evaporated, we knew it was time to take it out and taste it. It had taken on a woody flavour, quite distinct and lovely.
Also had egg cooked on the plancha & egg poached - preferred the poached version.
Potatoes, Rocket & Coriander. Added a sprinkling of Mediterranean salt and black pepper.

It arrived at the allotted time in sealed box with ice cubes - so as fresh as it was packed in the morning.
We were going to cook the beast on the Traeger Ranger. I think the Traeger takes all the risk out of the cooking when first cooking such a fine piece of meat at low temperature for, in this case over 9 hours.
But first we had to prepare the meat for cooking. Essentially you have to remove the outer fat layer to expose the touch 'silverskin layer - this needs to be removed, as it would be inedible.
The silverskin really keeps all the separate muscles in place - so after removal, we used string to keep all the meat together.
Then it was just a case of selecting the rub we wanted to apply. We used Angus & Oink General, with a little bit of Lumberjaxe Brazilian Tempero, a rub we use quite a bit on a range of meats.
When all prepared, we placed the Thor Hammer in an aluminium foil tray with a few shallots placed under it to stop any initial burning.
Also notice we placed the tray on the open grill with cast plate under that. We find this also helps avoid burning to the underside of the meat by avoiding direct contact with the cast plate.
We used Traeger Pecan wood pellets.
We commenced the cook with 3 hours hours at 125 deg c. Then added a bit of red wine to the tray and sealed with foil. At this point we reduced the temperature to to 105deg c & added the heat probe.
After a further 6 hours, with regular basting, this was the result -
Well you have t taste it before taking indoors, hence the missing slice. It was delicious. You can also see the depth of smoking achieved with such slow cooking.
