Another great idea - Fish Paella on your Gas BBQ
One of the best things about cooking fish on your Gas BBQ, is you keep all the fish smells outside.
All you need is a deep sided non stick pan that will sit on the BBQ grills
All you need to do is finely chop a couple of shallots & 3 Garlic cloves, a table spoon of coriander, a teaspoon of Smokey Paprika into the pan with a grizzle of olive oil & slowly cook for about 5 mins. Then add 300g of Paella rice & let that all warm through. Now add 800ml of Chicken Stock & one tin of chopped tomato's
Add a lid or piece of foil over the ingredients and let the juices infuse into the rice.
When the rice starts to soften, add the fish. I used squid & mussels.
I then partially cooked the Langoustines over another grill until the colour started to change - Then I placed them over the paella and covered with kitchen foil for another 4 minutes.
Then serve with a glass of wine, it that suits.
